A taste of change

Today I looked over my living room layout and thought " I really don't like the way my living room looks." So I thought about how I would like it to look with what pathetic furniture I have and changed it. I moved my sofas around and turned the TV into a corner. To say the least I messed with my husbands head when he came home from school.

But it also got me to thinking why I must change things up every 6 months or so. Am I the only person with this odd need? Well after looking around on the net I found that I wasn't! But what are we? I have a feeling that maybe ( and this is just my theory) we are all part gypsy, all of us people that need that change, that little bit of new and difference. But some people may think that is evil. The way I see it, it means that I am a free soul and that nothing earthly can keep me down.

That also made me think about my religon, being pagan, feeling the earth in all its wildness, freedom and belonging. But where do I belong as a pagan? I am shunned by the single god religons as a heathen, But I do not have the family roots as many of the multiple gods/goddesses. So where do I stand? Sadly as a whole I don't belong anywhere but at the same time everywhere. I am one, I am many, I am whole. There are many people like myself that I find cocky and too headstrong to be a true pagan, because when you choose to be pagan you should not take on the past from the life you had in another religon. You need to think clear and accept that though you are one, what you may say also effects many.

I don't know where I am going with this, I guess I am just rambling. Either way take from what you will and leave what you want, just remember what you do today will come back tomorrow.

Valentine's day Chocolate Truffles Recipe

Chocolate Truffles Recipe

Ingredients

Basic truffle ingredients
8 ounces of semi-sweet or bittersweet chocolate (high quality, 62% cacao or higher), well chopped into small pieces
1/2 cup of heavy whipping cream
1 teaspoon of vanilla extract

Optional base flavorings:
Mint leaves (1 bunch, stems removed, chopped, about 1 cup)
Cinnamon and cardamon (1 cinnamon stick, 2 cardamom pods)
Amaretto (1-2 tablespoons)
Almond extract (1 teaspoon)

Truffle coatings
Cocoa powder
Finely chopped walnuts
Finely chopped almonds

Method
1 In a small, heavy saucepan bring the heavy whipping cream to a simmer (this may take a while, be sure to stir and scrape down the sides with a rubber spatula every few minutes).
If you are using one of the other recommended flavorings, stir it in with the cream (and ignore vanilla in the next step). If adding mint or other solids, after the cream simmers, remove from heat and let seep for an hour. Then strain away solids, and return the cream to a simmer and proceed with recipe.
2 Place the chocolate in a separate bowl. Pour the cream over the chocolate, add the vanilla, and allow to stand for a few minutes then stir until smooth. (This chocolate base is called ganache.)
3 Allow to cool, then place in the refrigerator for two hours. Remove and with a teaspoon roll out balls of the ganache. Roll in your hands quickly (as it will melt from the heat of your hands) and place on a baking sheet lined with parchment paper. Place in the refrigerator overnight.
4 Roll in cocoa powder or chopped nuts and serve, or place back in the refrigerator until needed.

Makes 30-40 chocolate truffles.

COCONUT CHICKEN CURRY RECIPE

After reading a wonderful book call the moonlit cage by Linda Holeman, I really wanted to make Paan, and Indian bread. To my surpise I found myself looking at other recipes. I found this one and made it tonight. It was lovely, I changed the peas to Frozen mixed veggies and added 1/2 cup instead of 1/4 cup, it was wonderful, sweet and not spicy at all. I hope you enjoy it!

COCONUT CHICKEN CURRY RECIPE

Ingredients:

1/4 cup whole unsalted cashews
1 pound skinless, boneless chicken breasts, cut into 1-inch pieces
Salt To Taste
1/4 cup vegetable oil
1/4 tsp black mustard seeds
1/4 tsp cumin seeds
1/4 tsp ground coriander
1 tbsp curry powder
1 medium onion, thinly sliced
1 tsp finely grated fresh ginger
1 garlic clove, minced
1 (14 ounce) can unsweetened coconut milk
1/4 cup frozen peas
2 tbsp chopped cilantro


How to make chicken with coconut milk:
Preheat the oven to 350 degrees F.
Spread the cashews in a pie plate and bake for 5 minutes, or until fragrant and lightly toasted. Transfer to a plate to cool.
Lightly season the chicken with salt. In a large, deep skillet, heat 3 tablespoons of the oil until smoking.
Add the chicken and cook over moderately high heat until golden brown, about 1 1/2 minutes per side. Transfer the chicken to a plate and reduce the heat to moderate.
Add the remaining 1 tablespoon of oil to the skillet and heat until smoking. Add the mustard seeds and cook for about 1 minute, or until they stop popping. Add the cumin seeds, coriander and curry powder, and cook, stirring occasionally, until fragrant, about 1 minute.
Add the onion, ginger and garlic, and cook until the onion softens, about 10 minutes; if the mixture seems dry, add up to 1/4 cup of water to prevent sticking.
Stir in the coconut milk and bring to a boil. Reduce the heat to low. Return the chicken to the skillet and simmer until cooked through, about 5 minutes. Stir in the peas and cook for 1 minute. Transfer the coconut chicken curry to a bowl, sprinkle with the cilantro and cashews and serve.


Makes 4 servings.

Tapioca Pudding Recipe

While I was at the store buying the ingredients for Coconut Curry Chicken, I saw some Tapioca pearls and thought " HEY Mathew loves this, I should grab some and make some homemade." I had no clue to how it is made so I went looking online. After many searches I found a lovely site (URL will be posted at the end). Here is the recipe! Enjoy.


Tapioca Pudding Recipe
Look at the instructions on the package of tapioca that you buy. Some small pearl tapioca requires overnight soaking in water. If your package has that requirement, reduce the milk in the recipe to 2 1/2 cups from 3 cups.


Ingredients
1/2 cup small pearl tapioca (you can usually find it in the baking section of the grocery store, do not use instant tapioca)
3 cups whole milk (or skim milk with cream added)
1/4 teaspoon salt
2 eggs
1/2 cup of sugar
1/2 teaspoon of vanilla
Method
1 Combine tapioca, milk, and salt in 1 1/2 quart pan on medium high heat. Stir until boiling. Simmer 5 minutes, uncovered at the lowest possible heat, adding sugar gradually.
2 Beat eggs in a separate bowl. Mix in some of the hot tapioca very slowly to equalize the temperature of the two mixtures (to avoid curdling).
3 Return eggs to pan with tapioca. Slowly bring mixture barely to a boil, stirring constantly. Reduce heat and stir several minutes at a low simmer, stirring constantly until you get a nice thick pudding consistency. Cool 15 minutes. Add vanilla. Serve either warm or chilled.

Note: If you want to make a more light and fluffy, but still rich, tapioca pudding, separate the eggs. Use the egg yolks to stir in first to the pan with the tapioca. Once the pudding has become nice and thick, beat the egg whites in a separate bowl to soft peaks. Remove the pan of tapioca pudding from the stove, fold in the beaten egg whites into the pudding.

My New Betta Fish.

Today at work we had gotten in our new shipment of Betta fish. I fell in love with a little guy and well bought all the stuff and brought him home, much to my fiance's dismay. I have named my little guy Fraiser, because he is very earthy like the Fraiser Valley in BC. His coloring is something that I have never really seen before. The end of his fins are a light brownish orange, that get darker untill you get to his body which is a very dark brownish black, which by the way I have read that to get anything blackish is very rare so people if you ever see a black fish GRAB IT because you will never see them.

Now I had only one betta fish about 4 years ago, and well Bob died with in two weeks. But I think that since I 1. know that you must do research and 2. ask questions to a pro (like me I work in the small animal, reptile and fish department at PetSmart). I also know much much more about fish and how to care for them. I plan in 5 years to have a 150 u.s. gallon saltwater tank. But thats another story.

6 Ways To Have A Happy Betta

Bettas easily become addictive , and often people become very attached to them (I know I have ♥ ). Anybody who owns a Betta will want him to be the happiest he could be. These are just the basics to having as happy Betta, there are thousands of other possibilities to make your Betta happy, your imagination is the limit ! Let's get started on your Betta's way to happydom (cheesy I know, but I also don't care !)

#1. Males & Females. Male Bettas cannot under any circumstance be kept with other Bettas, not even females. They can however, be kept with other peaceful fish. Female Bettas on the other hand, can be housed together in groups of 3 or more. Male and Female Bettas can not be kept with other anabantoids; such as Gourami and Paradise Fish.

#2. Space. The more space the Betta ! (lol Betta-better.ha ha)It is a common stereotype about Bettas that they actually prefer living in small tanks, this is not true. They are capable of living in small homes because of their labyrinth organ which they use to breathe air from the surface; therefore, they don't NEED large quantities of water like other fish. But they love to have lots of space. In my opinion any thing smaller than 1 gallon is inappropriate. If you really want your Betta to enjoy life, get him a 5 gallon tank all to himself, he will LOVE you for it.

#3. Variety. People say that variety is the spice of life, well Bettas love their lives pretty spicy ! Bettas LOVE variety in their diet. Imagine how boring life would be if everyday you had that tuna casserole -Monday, Tuesday, Wednesday. (you get the point) So what is on the menu for your Betta? Here are some options: .
Bloodworms* .
Blackworms*.
Tubifex worms*.
Brine Shrimp*.
Mashed green pea**.
Pellets. Flakes***
*frozen, freeze-dried, or live*
*only occasionally; maybe once a week***
most Bettas will just look at you like you're insane if you attempt to feed them flakes. " Do you really expect me to eat this stuff ! " Try and feed your Betta twice a day, this way you aren't dumping tons of food all at once into their stomachs. Their stomachs are pretty small, about the size of their eye ! (pretty small don't you think ?!?) It is a good idea to fast your Betta once a week, because they can easily become constipated. Fasting them gives them a day to let their bodies clear out. Once a week don't give your Betta any food other than some green pea (it basically works as a laxative), and you should have absolutely no problems with constipation. So. Orders up ! (...just make sure you never take Mr. Betta to a sushi restaurant ! lol)

#4. Clean Water. Keeping his water clean will keep him happy, and it will help prevent diseases like Fin Rot. So how often and how much water should you change ? Well, if your tank is 10 gallons then divide it by some random number.heck ! That has absolutely nothing to do with water changes. Basically everybody has their own opinions on water changes. The criteria really depends on two main aspects though. If the tank is CYCLED, and the AMOUNT of fish in the tank. Cycling a tank involves developing a colony of bacteria capable of eating all the waste produced by your fish. As a basis, if your tank is less than 2.5 gallons and is NOT cycled than you should be doing 100 % water changes every week. If your tank is bigger, like 5 -10 gallons, and IS cycled, than you can be doing 25 - 35 % water changes every week. And since most Bettas aren't in any tanks REALLY big I will just let you figure that out yourself if your Betta is in a really big tank.

#5. Keep Him Busy. You don't want your friend getting bored right ? So you need to keep him occupied. Make sure he has some interesting objects in his tank, like plastic tubing (as mentioned above) you can buy these at pet stores. When I say plastic tubing I don't mean airline tubing, duh ! Make sure that the tube is solid and sturdy, meaning not flexible, and that the width of the tube is much larger than the fish, then there is absolutely no risk of Mr. Betta getting stuck. Bettas are very curious fish, therefore make sure the toys and objects you put into his tank have no small holes that he could try and get into and then get stuck. Maybe change around some of the toys occasionally so that his environment is not always the same. You could even interchange some of his toys.so he has a plastic tube one week and a cup the next week. But make sure the changes you make aren't too drastic or he may become stressed.and trust me -you don't want a stressed Betta !

#6. Stress Free. Just like in humans, being stressed all the time is not good. But with Bettas it has different effects then on us. It can make them turn into tail-biters, they can develop fin rot, and basically when a fish is stressed their immune system is not at its best, so it can't defend all the diseases as well. To put it simply, stress is not good ! So how do you create the most stress-free life as possible for Mr. Betta ? Well there are a couple thousand ways, but here are some that will have the most impact.

Water: Water plays a big part in the stressful life of a Betta. To have " stress free" water, you need to keep two points in mind. Temperature and Quality. Ok we will start with temperature. What is the perfect temperature ? Well you don't want the water to be too cold or too hot (think of it as you don't want an ice cube Betta, but neither do you want a boiled Betta) so a good temperature would be in the 70's to the 80's farenheight. Bow there is another factor in the temperature unit, you don't want the temperatures to fluctuate either. So if on Monday the temperature is 80 degrees, but on Tuesday the temperature is down to 71 degrees (you might say why didn't you just choose 70 degrees ? Well that's what everybody else would do.and I like to be unique)well than you would be stressing your Betta out, they don't like huge changes all at once, and the temperature that they are sitting in all their life is a big thing to them.don't you think !?! Almost forgot to mention.just incase you are new at keeping ANY fish, then to heat your tank you use something called a heater. You can buy one of these at nearly any pet store or aquarium store. Ok then.

Now for quality. The quality of your water is almost, if not more, important than the temperature. The water that comes out of that tap is full of Chlorine and Chloramines, these are not good for your Betta. You need to let this water " age " (meaning let is sit in a big bucket or something for at least 24 hours prior to putting it in with you fishy) and it also needs to be treated with a Chlorine/Chloramines remover, also known as a water conditioner. You can buy water conditioners at nearly any pet store or aquarium store. .

Position:Where you place your tank is quite important to providing your Betta with a stress-free life. You don't want your tank right near a furnace or a window. The furnace will make the temperature fluctuate, and it may heat up that water way too high !!! (and you know are little Betta friends are VERY picky about their water, as mentioned above ^) And if your tank is right by a window if may get cold in winter, or on a chilly day, brrr. lol, and once again you would then have fluctuating temperatures.those pesky fluctuating temperatures.BAN them I say ! BAN them ! And one more thing on the subject of position, don't put that tank where it could l get knocked, there would be a very little chance, but still worth protecting against, because imagine how stressful it would be if the tank came crashing down, water and plastic (or glass) when flying everywhere, and Mr. Betta went flying right under someone's foot.well you know the rest of the story.
Routine: I have found that my Bettas have all seemed happier when I put them on a routine. So I get to feel like a zoo keeper, keeper of the Bettas !!! So try and feed him at the same time everyday, and do your water changes on the same day, at about the same time every week, and basically anything that you have to do regularly try and do it at the same time, or day. So this is where the conclusion is supposed to go right !?! All right then. Let's see if I can come up with a conclusion. Bettas are wonderful pets, and they deserve to live the happiest lives possible (they only live for about 2 years, so they deserve to live like kings and queens for that short time.)

Poop Monster

Well its been a few days with out little guest and he has pooped and peed everyday. I know its because hes mad that my parents dropped him off at my place and he doesn't like it. So I've gone back to potty training 101. He is in his crate when he isn't outside to go potty. I hope it works because last night was a total piss off. He was out for 20 mins did nothing came in and as soon as I wasn't looking he pooped and peed on my floor. Right now hes not happy about it but if he would stop going to the bathroom in my house then things would be better. By the way dear readers he's 3 year old so there is no reason for this.

Our Little Guest


Well today marks the first day with out little guest. His name is Theador AKA Teddy or Theadork. Hes a min shnuozer(sp???) and Maltess cross. Hes 3 years old and if all goes well over the next 4 to 6 weeks we might end up keeping him. I have to cut his hair (never stops growning) becuase his mommy didn't have time to finish his clipping. He needs his back and sides clipped still. So I think sunday night I'll do this... hopefully it wont look to bad. I'll post pictures of how he looks.
